Variations: Add a pack of spinach before or after blending, change the herbs and spices. Serve with some steamed vegetables or a side salad.
Ingredients

- 1 teaspoon olive oil
- 8 cloves garlic minced
- 2 teaspoons dried thyme leaves
- 1 teaspoon ground cumin
- ½ teaspoon red chilli flakes
- 3 cans garbanzo beans, rinsed and drained
- 4 cups vegetable stock
- Salt and ground black pepper
- Balsamic vinegar, to taste
Instructions
- In a large pan, heat the oil and stir garlic until slightly brown. Add herbs and heat through for 20 seconds stirring. Add stock and garbanzo beans, bring to the boil, and then lower the heat and simmer for 30 minutes.
- Blend with an immersion blender or countertop blender (but be very careful as the heat can lead to pressure build-up with scalding hot soup going all over the kitchen and yourself!).
- When smooth, put back into the pan, add seasoning to taste.
